Baked Falafel

Falafel is a Middle-Eastern favorite, and these tender baked cakes of ground chickpeas and zesty spices will make any lunch or dinner an Ethnic classic! Enjoy the savory, crispy falafel sandwiches without all the fat; these falafel are baked instead of friend for an instant treat!

Ingredients:

1/4 c. chopped onion
1 (15 oz) can garbanzo beans, rinsed and drained
¼ c. fresh parsley, minced
3 cloves garlic, minced
¼ tsp ground cumin
¼ tsp ground goriander
¼ tsp salt
¼ tsp baking soda
1 Tbsp flour
1 egg, beaten
2 tsp olive oil

Directions:

1. Place onion, garbanzo beans, parsley, garlic, cumin, coriander, salt, and baking soda together in large food processor. Pulse until the mixture is coarsley pureed.

2. Transfer mixture to large bowl and add flour and eggs. Stir well to combine.

3. Shape mixture into 4-6 large patties and let stand for 15 minutes. Preheat oven to 400 degrees F.

4. In large oven-safe skillet heat olive oil over medium high heat. Place patties in skillet and cook until golden brown, about 3 minutes on each side.

5. Transfer skillet to the preheated oven and bake until heated through, approximately 10 minutes.
